It starts with the Chef‘s Traders Table. Here, you’re invited to help yourself (and go back as many times as you like), with a spread of unlimited appetisers that’s seriously, well, appetising. Fresh, vibrant salads steal the show: trevisano and castelfranco leaves with cheese, mulled wine and saffron-poached fruits, finished with toasted walnuts; a rich chickpea salad; and plump prawns with mango slaw. Add in rare roasted striploin with anchovy butter and manchego, charcuterie, cheeses, tomato tarts and very moreish veggie tortillas, and you’ve got a line-up that’s both indulgent and cleverly low-waste, made using off-cuts that would otherwise go to waste. It’s the perfect grazing table – and all unlimited, too.

We can confirm that the eggs royale is a standout – perfectly poached eggs with golden, oozing yolks, smoked salmon and a silky béarnaise on a toasted English muffin. You can also order pancakes or waffles piled high with berry compote and whipped cream. And at this point, why wouldn’t you?

For non-meat eaters, the pumpkin and sage ravioli is a worthy alternative, drenched in a zero-waste cauliflower velouté, topped with charred red onions and shaved truffled Gloucester cheese. It’s not a traditional roast, but undeniably indulgent and a treat for cheese lovers.
Just when you think you’re done, a trip to the dessert table is in order.
