Monkey 47, the premium dry gin distilled in Germany’s Black Forest, has announced the launch of its Distiller’s Cut 2025 expression. The annual small-batch release is known for incorporating a rare 48th botanical, sourced from a different corner of the world each year, into its already complex 47-ingredient recipe.

For this 2025 edition, the distillery turned to the Camargue region in the south of France, renowned for its ancient salt marshes and hand-harvested ‘Fleur de Sel’ crystals. 

This fine sea salt, collected using traditional methods, becomes the latest ingredient to join Monkey 47’s growing list of sought-after special editions.

A collectible edition with a saline twist

Monkey 47 has a reputation for eccentric craftsmanship, combining Black Forest botanicals with global flavours in highly collectible bottlings. Distiller’s Cut has become a brand highlight, with each edition selling out through an online raffle.

This year’s hunt for a ‘species rara’ led to the sun-bleached pink salt pans of Camargue, where salt farmers, known locally as sauniers, harvest Fleur de Sel by hand using long-handled skimming tools. The mineral-rich crystals lend a subtle saline character to Monkey 47’s botanically intense profile, promising a drier, more piquant expression with a whisper of sea air on the finish.

The bottle arrives dressed accordingly: a shimmering pale pink and blue label with iridescent detailing, nodding to the marshes and skies of southern France. The familiar bottleneck ring bears the Latin inscription ex pluribus unum – ‘one out of many’ – and is once again finished in gold for the limited release. 

A sustainably produced gift box, printed with Monkey 47’s illustrated wallpaper motif, completes the presentation.

Monkey 47 Distiller’s Cut 2025 Fleur de Sel is bottled at 47% ABV in a 500ml format. As with previous editions, availability is strictly limited and offered via online raffle through the Monkey 47 website, with selected international markets receiving a restricted allocation.
