The Dalmore has added a new permanent whisky to its core Principal Collection, a 17 year old Highland single malt that deepens the distillery’s long-standing exploration of Sherry cask maturation.
The Dalmore Aged 17 Years is positioned as an evolution of the house style, building on techniques that have defined the brand for decades.
The new release follows a familiar but carefully honed maturation path. Spirit is first laid down in American white oak ex-Bourbon barrels, where it develops a foundation of soft vanilla sweetness and honeyed character. From there, it’s finished in a trio of Sherry casks sourced exclusively from González Byass, The Dalmore’s long-term partner in Jerez.

Poached pear, forest fruit and spice
The use of three distinct Sherry styles is central to The Dalmore 17 Year Old’s profile. Rare Apostoles casks provide structure and savoury depth, while Amoroso casks offer balance between sweet and dry elements. Finally, Matusalem Oloroso casks add richness, weight and a lingering sweetness. All three cask types are drawn from aged stocks that have spent decades maturing in Spanish bodegas before being selected for whisky use.
According to The Dalmore, the extended maturation of the 17-year-old allows these influences to integrate more fully, enhancing the distillery’s signature notes of chocolate, orange and gentle spice while adding complexity and length.
The Dalmore Aged 17 Years tasting notes
In the glass, the whisky reportedly opens with aromas of Seville orange, rich orchard fruit and wood spice.
On the palate, flavours of poached pear, forest berries, sweet toffee and orange marmalade emerge, leading to a finish marked by dark chocolate orange, dried fruits and hints of cinnamon and nutmeg.
The Dalmore Aged 17 Years is presented in the distillery’s signature bottle, complete with the stag emblem, and housed in a purple presentation box with magnetic closure.
Bottled at 42% ABV, The Dalmore Aged 17 Years sells for £175 (€200 / $250).
