I taste all five new limited edition Ferg & Harris Single Cask whiskies, and every dram is a revelation

Ferg & Harris, known for pairing rare, single malt casks with novel finishing woods, has released a collection of five premium whiskies, selected from Bunnahabhain, Craigellachie, Tormore and Longmorn distilleries

This collection features two unique expressions from Craigellachie, matured in an Amontillado Sherry butt then divided into two different finishing casks, one Virgin Oak, the other White Port. While these sisters share the same fruity maturation, they boast quite different taste profiles.

Ferg & Harris co-founder Alex Harrison says of the process: “When aged whisky meets exotic wood, there’s an element of alchemy that produces a sometimes unexpected but always incredible dram. The latest five whiskies to join our collection are very special. Each cask was already a first-rate single malt whisky, but we have added that little bit of extra time in a richly flavoured finishing wood, and that’s when we see the magic happen…” 

Each release in this collection has fewer than 300 bottles. All are non-chill filtered, bottled at natural colour, and represent a unique cask finish.

Ferg & Harris Single Cask Collection tasting notes

11 Year Old Tormore, £89.99

Bottled at 63.3% ABV and golden hued, this 11 year old is all sweetness and spice, having been matured in a first-fill bourbon barrel and then finished in virgin oak.

The nose detonates with honey and summer fruits. On the palate, the liquid reveals itself to be robust and warming, with notes of apple crumble, orange, a kiss of vanilla, and cinnamon and ginger spice. The expression is limited to 205 Bottles. 

12 Year Old Longmorn, £124.99

Limited to 288 bottles, this pale 58.8% ABV Longmorn has been matured in a first-fill bourbon barrel and finished in white port. On the nose, this luxurious dram entices with strawberries and cream. On the palate, expect green apples, honeydew melon and citrus notes. The finish is astringent and chocolatey.   

14 Year Old Bunnahabhain, £139.99

Bottled at 54.7% ABV, this 14 Year Old Bunnahabhain will enchant lovers of smoky, maritime whiskies. Initially matured in a second-fill Oloroso hogshead, this Islay dram was finished in a Sauternes barrique, adding a sweet complexity to its smoky core.

On the nose, expect tar soap and smokery aromas. On the palate, the whisky serves a brunch of smoked bacon, pan-fried haddock, and spice. This release is limited to 281 bottles.

15 Year Old Craigellachie (Virgin Oak), £129.99  

A first for Ferg & Harris, this 15 year old Craigellachie, bottled at 64.2% ABV, was matured in an Amontillado Sherry butt before being finished in virgin oak. The result is a whisky brimming with honey, pastry, and dried fruit aromas.

On the palate, expect a shift to caramel, vanilla, and subtle spice, leading to an elongated, sardonic finish. 284 bottles are available.

15 Year Old Craigellachie (White Port), £129.99 

The sibling of the Virgin Oak-finished Craigellachie, this amber expression was also matured in an Amontillado Sherry butt but finished in white port wood. The nose offers roasted nuts and pain au raisin. On the tongue, the spice is pronounced, with chewy caramel and ginger, giving way to a long, warming finish. There are 279 bottles in the wild, with an ABV of 63.1%.

All five whiskies are available for purchase directly through the Ferg & Harris website, and specialist whisky shops.
