Highland Park launches 16 Year Old whisky in collaboration with Björn Frantzén, urges fans to taste differently

Highland Park has partnered with Swedish chef Björn Frantzén for a new 16 year old single malt, Between You and I. Frantzén is known for his boundary-pushing approach to gastronomy, blending Nordic ingredients with French techniques and Japanese culinary philosophy. For this collaboration, he brings a unique sensory storytelling to whisky, offering a more personal, emotional approach to tasting.

Unlike traditional releases, Between You and I does not come with a fixed set of tasting notes. Instead, Highland Park encourages drinkers to engage with the whisky intuitively, using a booklet of prompts to record their own impressions.

Each pack arrives in a spray-paint styled presentation box designed by the chef, inspired by his early love of graffiti. He describes the design as “perfectly imperfect” intended to mirror the layered nature of tasting whisky.

Highland Park embraces emotion-led whisky tasting

Frantzén, the only chef in the world to simultaneously hold three Michelin stars across three different restaurants, was the first to taste the whisky and responded not with formal descriptors, but memories and sensory associations.

This whisky is like a conversation between memories, flavours, and places, he said. ”When I tasted marzipan, I felt like I was back in my grandmother’s kitchen in Sweden, doing the Christmas cooking. The smell of almonds, the cold outside, and the cosiness inside. Pure nostalgia” 

Paul Condron, Brand Director at Highland Park, explains: “Between You and I invites people to share their own personal tasting notes and what the whisky evokes for them, from a treasured memory to a favourite song. No two people will taste the same thing.”

Between You and I is matured for 16 years across a selection of virgin Swedish oak, a first for Highland Park, alongside sherry-seasoned European and American oak, and ex-Bourbon casks. The distillery describes the result as layered and complex, designed to spark conversation between drinkers rather than dictate what they should taste. It’s bottled at 48% ABV.

Highland Park’s Between You and I 16 year old single malt is available from Master of Malt, priced £145.

A companion release, Between You and I: Journeys, a 17 Year Old expression with the same sensory concept, will launch exclusively through Global Travel Retail, priced at £155.
